Every great dish at Romeo Lane begins long before the tandoor is lit. Our Midnight Butter Chicken starts its journey eighteen hours before it reaches your table, marinated in a blend of hung curd, smoked fenugreek, and a spice mix passed down through three generations of our founding family.

It's a process that resists shortcuts. The chicken is turned twice by hand, rested in a cool larder, and brought to the tandoor only once our chefs are certain the marinade has done its quiet work.
